Please head over to your WP dashboard and then settings and permalinks. On that page scroll down and click on Save Changes button.

By default, the Rank Math plugin picks the data of the author of the post and displays that. If you need better control, we highly recommend using the WP Review plugin:

This is what I did:
1. Deactivated all the current redirections
2. Imported the redirections from the Yoast's settings again (Import/Export tab)
3. Checked your website. Everything was running fine.
4. Deleted all the deactivated redirections.
Can you please check on your end?
Also, in the future, after adding any redirection, please check if your website is working fine as adding wrong redirections can make your website load incorrectly.

It seems like you accidentally created redirects for those posts, redirecting back to the same post. That resulted in an infinite loop.
I went ahead and disabled those redirections.
Also, I changed this setting:

WordPress handles that on its own and unless you are making use of those redirects in a special way, it is not advised to turn this option On.

With Rank Math, you do not need any additional plugin to support AMP pages. Just turn on the following module in the plugin

Save the settings and you should be all set. You can find that option from here:

It was a cache in the plugin and the process got stuck somehow.
We deleted the file and put that back again, which did the trick.
It should not happen.

Verifying your website with Search Console helps, data fetching is merely for the stats.
You can manually update the cache from this page:
wp-admin/admin.php?page=rank-math-options-general#setting-panel-search-console

That is happening because all your post tags are set to noindex and you are trying to generate a sitemap of it. Which is not required.
Please head over to the following tag and turn off the sitemap for the tags:
wp-admin/admin.php?page=rank-math-options-sitemap#setting-panel-sitemap-taxonomy-post_tag

and click on Save Changes button.

Google may not show your meta details always as you have entered. Google picks the best meta title and description based on your page content. If you will make your meta details close to the content then there are higher chances that you will see what you may have entered. Ultimately search engines will, as you have seen, make the final decision on what they show in their search results. Due to this being handled on Google's end, there is little you can do to force Google to display the preferred description.
